Background: The Maillard reaction products (MRPs) formed after roasting of oil-tea camellia seeds (camellia seeds) were investigated. Camellia seeds are inevitably heated during processing, but the effect of heating or roasting on the physicochemical properties of camellia seed or oil-tea camellia seed oil (camellia oil) has been seldom studied, especially with respect to the Maillard reaction.
The seeds can be pressed into a quality high-temperature oil that is used mostly in Asian countries for cooking. Tea oil is thinner than olive oil with a mild taste, tea-like aroma, and high in beneficial fats. The seeds can also be used for propagation but the seeds are not true so will not produce an exact duplicate of the parent plant.
